- 3 cups cake flour
- 2 teaspoons of baking powder
- 1 teaspoon of fine table salt
- 1/2 cup full fat coconut milk
- 3/4 cup buttermilk
- 2 teaspoons of pure coconut extract
- 1 teaspoon of pure vanilla extract
- 2 cups of sugar
- 170 g softened butter
- 1/4 cup vegetable or canola oil
- 1 cup chopped white chocolate or chips
- 3 eggs
- 2 egg whites
- 1/2 cup butter (1 stick), room temperature
- 4 oz cream cheese, softened
- A pinch of fine table salt
- 1 teaspoon of lemon juice
- 1/4 cup coconut milk
- 2 1/2 cups icing sugar
- 1/2 teaspoon coconut extract
- 1/4 teaspoon pure vanilla extract
- 1 1/2 to 2 cups sweetened shredded coconut

Tom Cruise’s famous cake recipe

Preheat the oven to 340°F, then grease and lightly flour a 12-cup Bundt pan, setting it aside. In a bowl, combine the cake flour, baking powder, and salt, and in another bowl, combine the buttermilk, coconut milk, coconut extract, and vanilla extract. Using a stand mixer or electric mixers, cream the butter, sugar and oil on medium speed for about 3 minutes until the mixture is light and fluffy.
Gradually add the eggs and egg whites, one at a time, beating well after each addition. Scrape down the sides of the bowl and beat for another 2 minutes on high speed. On low speed, alternately add the dry ingredients and coconut mixture in three additions, mixing until well combined. Be careful not to overmix and add the white chocolate.
Pour the batter into the prepared Bundt pan and bake on the middle rack for about 55 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan on a rack before inverting.
